Oats are among the healthiest grains on earth. They’re a gluten-free whole grain and a great source of important vitamins, minerals, fiber and antioxidants.
For a busy mum, they are quick and easy too, especially if we’re talking to overnight kind. So even if you haven’t enjoyed oats before, now’s the time to give them a second chance. Overnight oats can be mixed with endless fruits and superfoods to make them your Goldilocks “just right”. Here’s one we tried the other day and loved by Kayla Itsines.
Ingredients (serves 1): 160g raspberries 60g rolled oats 150ml low-fat milk 125g low-fat plain yoghurt 1 tbsp chia seeds ¼ tsp vanilla extract ½ tbsp honey
Method:
1. Place half of the raspberries and a little water in a blender and blend until smooth. 2. Place the oats, milk, yoghurt, blended raspberries, chia seeds, vanilla and honey in a bowl and mix well to combine. 3. Pour the mixture into a mason jar or glass, cover and refrigerate overnight.
*To serve: top the overnight oats with the remaining raspberries and enjoy!
